Mmm.... ravioli

I couldn't stand it.  I tried out my new toy... er, tool this afternoon.  There is definitely a learning curve with the ravioli maker but, all in all, it wasn't difficult.
I used a filling of cooked chicken,  blanched nettles, pepper, cayenne, shredded mozzarella and an egg. Sorry, no actual recipe to offer because I didn't really measure anything.  I just threw it into the food processor until it looked right.  It turned out a little dry when cooked.  It would probably be better with ricotta but I14 doesn't like ricotta so this was a compromise.
After rolling the pasta dough into long sheets, it gets folded in half lengthwise and placed into the roller.  
 A little filling is added and the crank is turned..
 more filling is added as the dough progresses through, stamping out lovely little raviolis!
 They look pretty good for a first attempt, if I say so myself.
 I don't know if it is my dough or the machine but my little zig-zag perforations didn't cut.  So, I sliced them with a knife.  I'm not too proud to eat the edges either.
They cooked in less than 5 minutes.  Dropped into boiling water, they are done when they float.

I made a tomato sauce for those who like that, but most of us ate them with a butter/herb sauce.
Browned butter with fresh chives,  fresh garlic chives, pepper and a little dry sage (my sage plant is still dead looking).
Fabulous!!
Definitely not an everyday food but worth the effort.

V says he sees me going on an all day pasta bender sometime soon and freezing lots of fettucini, spaghetti and raviolis.  Definitely a possibility.

I've been pricing these pasta makers and ravioli attachments online and I'm thinking I got a great deal.

    1. V thinks I'm a bit odd that I peruse Craigslist on a regular basis. But you never know what you may find. I wasn't actively looking for one of these but I definitely jumped at the chance.

  3. I love mine plain too,those look so good and I can't believe you got such a good find on Craig list,it looked practically new!

    1. The family I bought it from is a young family. The mom said they have only used it a few times but they are moving to California and don't have room for everything. This was one thing they decided they could live without. A bonus for both of us.

    1. Definitely! And little ones love to turn the crank. Older ones.... not so much. But if you find a good deal it's definitely a good investment. I think these last practically forever.

  5. How cool is that?! Just to show my ignorance, I thought the pasta maker would just spit out the cut ravioli squares and you would then have to put a little bitty bit of filling on the bottom half, add the top half and crimp them together by hand. Duh! Once again, I sure do learn a lot from you other bloggers! ('Course, it could be that I'm exceptionally stoopid!)

    I'm reading this Sunday morning before breakfast and my mouth is actually watering thinking of that ravioli. Mmmmm-mmm, good!

    1. I have hand made ravioli before. You can also get ravioli boards where you lay one sheet of pasta on the board (with divits for the filling) and lay another on top. I think you then roll over them with a rolling pin to crimp the edges.
      I think it's kind of cool that they also give instructions for making your own tortellini as well. Those are the one square at a time thing...

    1. I had seen them before but this is the first time I've got to use one. I was hoping it would cut them apart a bit better but maybe it's a problem with my dough. I see experimentation ahead.
