Sweet potato biscuits

Biscuits in process

A few days ago, on Women Not Dabbling, Gina posted a recipe for her Dad's Sweet Potato Biscuits.  It looked lovely.  So, having the day off (when not inventorying my fridge or doing laundry) I cooked up some of the sweets in the basement and tried them.  A hit at our house, even with those reluctant to try new things (read I and K).

The finished product
But as you can see from the nearly empty pan in the back, they evidently were pretty tasty (they were!)  I wasn't sure how many the recipe would make so I ended up with 2 pans.  Maybe I should have rolled them thicker but they seemed to take forever to bake the way they were.

  1. Theese sorts of bisucits are alien to me. I think it's very much just an American thing.

I've never been enticed by the ordinary kind, but these look great. And I love sweet potatoes.

I checked the other site and there were no pics so thanks for sharing yours.

I'm going to see if there are sweet pots available ehre and then give this a try.

BTW, how do you normally eat them? I've got the impresision they're eaten alongside a meal?

  2. We ate them along with our meal but I'll confess, I had some with butter and honey for breakfast this morning.

  3. Oooo... I printed this recipe, too, and cooked off some sweets to make them with. I'm making them this weekend!

Glad you stopped in. I would love to hear from you.
